For example, he emphasises the excellent quality and characteristic flavours of Berkshire pork from the Black Forest, cleverly underscoring those flavours with an accompanying sweet-and-sour note. This is cooking that eschews frills in a bid to remain true to the authenticity with which this house is synonymous. The wine list features a good selection of Austrian labels.
