The vegetarian interpretation of filet americain has already become a classic of chef Tomas Bron's. He creates this appetiser with house-made focaccia and deeply spiced and intensely flavoured tomato for an amazing trompe l'œil effect! His sauces are equally worthy of acclaim, such as the exquisite poultry jus with morels, which elevates the partridge fillet beautifully.
