Having been given free rein to do his own thing by owner Robert-Jan Nijland, chef Michel van der Kroft has come up with a unique culinary style that puts great emphasis on vegetables and incorporates Portuguese influences. He can carry off the classic Escoffier recipes just as well as any chef. Think perfectly cooked tournedos Rossini, or a sublime foie gras and smoked eel terrine with aged balsamic and textures of beetroot. He also delights diners with his creative vegetarian dishes and his ravioli with Queijo da Serra da Estrela sheep's cheese – a house specialty. With a generous and refined touch, Chef Van der Kroft puts a unique and generous spin on familiar flavours.
