Authenticity abounds here at Chef Shinji Kanesaka’s London outpost. You’re greeted in the lobby of the 45 Park Lane hotel and escorted up to the hidden room on the first floor. The counter seats is made from a single piece of hinoki cypress wood, while the room is traditionally decorated with bamboo, ceramics and kumiko panels. The omakase menu is made up of around 18 pieces, with the stunning nigiri interspersed with dishes such as steamed abalone or grilled Kobe beef. Much of the seafood is from European waters, while the rice is from Yamagata.
