Straw-smoked Spanish mackerel is dressed with wasabi and mustard, adding depth to the flavour. Spiced with wasabi, wide strips of tuna are hand-moulded to wrap around the sushi rice, which is served warmer than normal to bring out the sweetness of the fat. Sushi portions are generous but can be adjusted to a preferred size. First-time customers are especially welcomed at lunchtime, to spread the word about the joys of sushi.
