If you’re keen to explore the more personal side of chef Ricardo Temiño’s cooking, this offshoot of the La Fábrica restaurant, but with the same entrance, is a space with its own individual character where the aim is to explore the rich culinary culture of Burgos in more depth. The experience begins with appetisers in front of the reception area, where you’ll find the extensive wine cellar, before heading into the kitchen (accompanied by the chef) to see how they age lamb, before moving on to the modern dining room with its semi-open kitchen. Here, the more concept-based, market-inspired cooking is showcased on a single tasting menu called Camino, inspired by the chef and his family’s life journey (there are references to his honeymoon, his grandmother, the early days of the La Fábrica restaurant etc), as well to as the extensive research he has carried out into different aspects of the province’s history (wool, fish, El Cid, the Camino de Santiago etc).
