The chef has a meticulous approach to his extremely well-crafted and visually appealing cuisine. Take his lightly smoked breast of Anjou pigeon, paired with a giblet mousse, a parsnip mousse and a wonderfully intense sauce infused with garam masala. This really is a fairy tale castle!
