The Experience

From Michelin Guide

In the middle of the old town, a stone's throw from Marktplatz and the striking Kirche St Sixtus, is the small Ratshotel. Not only does it have attractive, comfortable guestrooms, but it also boasts an appealing restaurant. Chef-patron Daniel Georgiev prepares a modern set menu using select produce and drawing on international influences. On Tue-Thu there is an additional surprise menu. The excellent wine list features over 300 labels including a decent champagne selection. Friendly, attentive, and professional service come courtesy of charming hostess Petra Georgieva and team. The interior is chic and elegant with a walk-in wine climate cabinet that is sure to draw the eye. For a more down-to-earth alternative, head to Gute Stube for steaks etc.

Unique Things

From Visitor Experiences

  • A hotel dining room in Haltern’s old town that offers a flexible set menu where guests choose the number of courses, instead of locking everyone into one tasting length.
  • A pantry that deliberately mixes local sourcing with international high-end ingredients, then frames them in modern seasonal cooking.
  • A deep cellar culture, with an extensive wine list and a visible, walk-in wine climate cabinet as part of the room.

Ingredient Stars

From Visitor Experiences

Key ingredients and motifs that show up in Michelin’s description and the current set menu include Müritz venison, Wipperfürth salmon trout, Balfego tuna and truffles, plus the menu’s explicit anchors of mackerel, pigeon, turbot, caviar and raclette cheese. The cooking is structured as a seasonal set menu with optional luxury turns, rather than an à la carte signature-dish house.
