The charismatic and heavily tattooed Guillaume Sanchez crafts fiery, flame-licked cuisine in a fashionably stark interior, depicted by an impossibly high ceiling and an austere metallic façade. Sanchez’ cooking, emblematic of his flamboyant personality, is only available à la carte, in keeping with his universe and ethos. The menu is divided into four main families, but, technically, nothing has changed: cold-steamed extractions and fermented vegetables. The chef works exclusively with pure-bred French, stellar produce, to which he adds his imaginative hallmark and high-flying technical expertise.
