The Experience
From Michelin Guide
Since its reopening, this lovely restaurant just outside the city centre has acquired a new head chef in Robert Steuri. In the evenings, he and his dedicated team showcase precise craftsmanship and top-notch ingredients in two intriguing and innovative three-, five- or seven-course set menus, one of which is vegan. The dishes are full of finesse and carefully composed, elaborate but not cluttered – a great example is the green asparagus, mushrooms, snow peas and beans. Options are more limited at lunchtime. The attractive setting sees the charming features of this old building, such as high ceilings with decorative mouldings and wood panelling, seamlessly integrated into its sleek and elegant modern design. Professional and well-coordinated service.

Signature Ingredients
- Green asparagus: A seasonal centerpiece highlighted by Michelin as part of Maihöfli’s refined vegetable-focused courses. Its bright, crisp qualities symbolize the restaurant’s emphasis on seasonal produce and precise technique. Sourcing is tied to peak spring harvests, and it is prepared to retain sweetness and a delicate texture, allowing it to shine alongside other finely crafted vegetables.
- Mushrooms: An earthy, umami-rich component that complements the asparagus in the Michelin-described dish. Mushrooms add depth and richness while remaining light enough for the course’s elegant balance. They are chosen for their depth of flavor and ability to harmonize with other vegetables in a refined, modern European context.
- Snow peas: A crisp, sweet-green element that provides color, snap, and a refreshing contrast to the other vegetables. Snow peas contribute texture and brightness to the plate, aligning with Maihöfli’s focus on clean, precise flavor profiles and seasonal produce.
- Beans (green beans): Contributes another layer of texture and a subtle earthiness that rounds out the vegetable ensemble. When paired with asparagus, mushrooms, and snow peas in Maihöfli’s menus, green beans help achieve the dish’s balanced vegetables-forward narrative, emphasizing the restaurant’s dedication to high-quality, seasonal ingredients.
