The Experience

From Michelin Guide

Set in the KODE 4 art museum, this stylish restaurant offers views over lake Lille Lungegårdsvannet. Larger than life Chef-Owner Christopher Haatuft passionately oversees the whole place, serving dishes and engaging with guests. The 10 course tasting menu is informed by fabulous Norwegian produce, always including scallops landed nearby by Christopher’s close friend. Dishes have a freshness about them and allow the main ingredient to shine.

A building with history and culture

  • Lysverket is housed in the former Bergen Lysverker headquarters, a repurposed industrial building, located by the KODE art museums, blending dining with a cultural setting.

Strong local-sourcing through MatTak rooftop farming

  • Chef Christopher Haatuft runs MatTak, a local initiative that grows food on city rooftops and supplies Lysverket with vegetables grown locally, aiming to reduce environmental impact.

Michelin-starred Nordic dining with a curated tasting experience

  • Lysverket has held one Michelin star since 2023 and has been highlighted internationally (notably by the New York Times in 2017 as redefining Nordic cuisine); the restaurant offers a 10-course tasting menu with wine pairings or non-alcohol pairings.

  • Local Western Norwegian seafood: Lysverket emphasizes seafood sourced from the Western Norwegian coast, prioritizing freshness and regional character. Dishes showcase the coastline's bounty, forming the backbone of the restaurant's modern Nordic cuisine.
  • Handpicked shellfish: A hallmark of their coastal focus, shellfish are selected for texture and flavor to highlight the marine terroir of Norway.

  • Seasonal meats: The menu incorporates seasonal, locally sourced meats, aligning with sustainability and regional biodiversity while providing depth and variety in the tasting experience.
  • MatTak-grown vegetables: Vegetables cultivated locally by MatTak (a collaboration with a local gardener) contribute fresh, seasonal produce to the dishes, reflecting Lysverket's emphasis on local farming and environmental responsibility.
