Wonderfully fresh seafood is prepared using traditional home recipes that allow the high-quality ingredients to shout their name. Steamed zebra mantis shrimp on egg white custard boasts bouncy, umami-laden meat. The mantis shrimp in chilli and garlic and steamed fish in sea salt are equally good.
