- 蜂蜜(都市型養蜂由来): l’élan では都心で蜂蜜を採る都市型養蜂プロジェクトを展開。GYRE の屋上とフランス大使館で養蜂を行い、2023年より山梨でも養蜂を拡大。採蜜した蜂蜜はフロマージュとともに提供され、春にはとろりとした甘さ、秋にはシャリッとした質感の蜂蜜が楽しめる。季節によって風味が変わる蜜は、クラシックなフレンチ技法と日本産食材の融合を象徴する、l’élan のサステナブルで独自の味覚体験の核となる。
