Behind a traditional Ardennes stone facade lies a classy demonstration of contemporary interior decoration, dripping in elegant comfort and commanding a fine view of the garden. Chef Mario Elias conjures up a creative score that can vary from complex to surprising, depending on his inspiration, but which is always flawlessly balanced, courtesy of his respectful use of fine local produce. He may enhance medium rare venison with red cabbage and kumquat, a terrine of sweet chestnuts and a bao bun stuffed with black tripe. The Elias family bends over backwards to pamper their guests and Jonas, the son, is always close at hand with insightful wine tips. Cooked from scratch with veg from their own kitchen garden.
