The Experience

From Michelin Guide

The place is named after Abbé St Crescent, who in the Middle Ages opened his doors to pilgrims on the Camino de Santiago. The arcades and bare stones may be a throwback to the distant past, but today the decor is ultra-modern, with finely crafted black and white polished concrete floors and sculptural one-piece seats. Lionel Giraud, son of a restaurant owner, is a strong advocate of locally sourced produce. An inventive chef, he honours ingredients from the most noble (Mediterranean red tuna) to the most modest (green beans) and everything in between, such as an authentic Corbières buffalo mozzarella. He is also a proponent of ikejime, the Japanese method of killing fish that maintains the quality of the meat and is argued to be more humane.

Unique Things

From Visitor Experiences

What makes La Table Lionel Giraud distinct

  • A contemporary room inside a medieval shell: the arcades and bare stone recall the building's past as a shelter for pilgrims on the route to Santiago.
  • Occitan ecosystems as the organising idea: menus are written around what comes back from market, fishing and hunting, with a strong locavore stance.
  • A precise, sea and vegetable led style: cooking that leans iodised and plant forward, with technical markers like ikejime fish work and long matured bluefin tuna.

Signature Ingredients

  • Ikejime handled fish: the kitchen uses ikejime handling, allowing for deep flavour and precise texture in fish courses.
  • Bluefin tuna, long matured: a 48 day maturation is used for a dense, melting texture.
  • Carrot and chickpea from Lauragais: humble vegetables treated with fine dining seriousness, alongside higher end products.
  • Occitan coastal and lagoon flavours: an iodised, vegetable led style tied to the landscapes around Narbonne and Leucate.
