The Experience

From Michelin Guide

The name of this restaurant occupying a large 18C house is deliberate as it reflects the professional relationship that chef Eduardo Quintana once had with cycling. This is highlighted by the saying by Albert Einstein at the entrance (“Life is like riding a bicycle – to keep your balance, you need to keep moving”) which influences his general attitude to life. It boasts a pleasant patio-terrace, where guests can savour appetisers, plus an attractive rustic-retro decor inside. The cuisine is centred on two tasting menus (La Vuelta en Bicicleta and La Escapada) featuring modern dishes that reinterpret Basque and Cantabrian traditions with a large dose of creativity, the use of select ingredients from the family’s own vegetable garden, plus influences from further afield. For an even more comprehensive experience before you eat, why not visit the garden which is just 1km away (it’s not a bad idea to take another pair of shoes just in case!).

  • A cycling-themed tasting-menu ‘route’, starting with snacks in the garden, moving through a bar-bite sequence, then main courses at the table, and finishing with desserts.
  • A one-hectare organic farm (Huerta El Francés) sits about 1km from the restaurant, visits can be requested in advance.
  • A separate pasture farm (Granja Moncobe) supports in-house livestock, aimed at increasing self-sufficiency and local breeds.

Tasting menus

  • One tasting menu, La Grande Boucle, offered in two lengths, built around seasonal vegetables, fish and meat.
  • Standard menu: €150, extended version: €180.
  • A vegetarian, pescatarian or vegan menu is available by request (17 courses, €150).

Format

  • The opening snacks can be served in the restaurant garden (weather permitting), then the meal continues through bar bites and into the main courses, finishing with a dedicated dessert sequence.
