Just before it is fully cooked, rice exudes a beguiling cloud of steam. The pursuit of such brief moments, with their beautiful fragrance and texture, is integral to the spiritual nature of the Japanese. Steamed rice and okoge (scorched or crispy rice) each offer fleeting moments when their unique appeal is best tasted. Dishes cooked with fermented vegetable peels bring out the flavour of this honest fare.

Counter-Only, Intimate Dining

  • The restaurant embraces an explicit philosophy that ingredients are life and no part should be wasted; its famous Grilled Sesame Tofu is kneaded for hours using high-quality kuzu.

Signature Ingredients

  • Sesame tofu (Goma-dōfu): The restaurant’s hallmark dish, a Grilled Sesame Tofu prepared from sesame paste and carefully treated to achieve a delicate, smoky flavor. It is famously served as a centerpiece in Jiki Miyazawa’s courses, embodying the restaurant’s philosophy of using ingredients with utmost respect and precision.
  • Kudzu starch (Kuzu): A high-quality kuzu starch is used in the preparation of the grilled sesame tofu, kneaded into the sesame mixture for hours to create the tofu’s signature smooth, cohesive texture and depth of flavor. The kuzu acts as a key binding and textural agent that elevates the dish beyond ordinary tofu.
  • Whole-ingredient philosophy (Ingredients are life): Beyond a single ingredient, the kitchen operates under a philosophy that every part of an ingredient has value and should be utilized fully. This approach shapes sourcing, preparation, and plate composition, ensuring maximum flavor and minimal waste across courses.
