The Experience

From Michelin Guide

HYDE keeps the lights down low but cranks the music up high – and the laid-back, lively atmosphere makes for a fun evening out. Top quality ingredients are skilfully cooked to create delicate dishes with bold, punchy flavours. Well-chosen natural wines and super-friendly service add to the experience.

Unique Things

From Visitor Experiences

What sets it apart:

  • A small, intimate basement room, with a set-menu format that changes frequently.
  • Two ways to eat, the full set menu of around nine servings, or a shorter four-course option at the bar counter midweek.
  • Pairing-first drinks thinking, with a dedicated wine pairing, non-alcoholic options, and a list that leans heavily into grower Champagne.

Ingredient Stars

From Visitor Experiences

Signature ingredients and anchors of the kitchen:

  • Seafood as the menu backbone, treated with clean sauces and sharp, citrus-led finishes.
  • Seasonal produce, used for structure and freshness rather than garnish.
  • Citrus, used as acidity and perfume across savoury courses.
  • Spice, used for heat and aromatic lift, not sweetness or fuss.
  • Grower Champagne and a tight wine selection, built to match the set menu pacing.
