São Paulo, Brazil
From Michelin Guide
This dark and intimate Japanese restaurant, somewhat hidden between the Moema and Indianópolis districts of the city, is definitely worth a visit. As soon as you enter, you’ll be invited to sit at the sushi bar at the centre of proceedings to choose one of Huto’s menus (one features lots of different options, while the two Omakase menus take you on a journey into the chef’s culinary world). Options include brioche with wagyu tartare and Macadamia nuts, oysters with ponzu, and a superb array of sushi – through the latter the chef demonstrates his undeniable skill in front of our eyes (although some diners are happy to order just a single type of sushi). But one dish that we particularly enjoyed was the hot tuna sashimi with tahini: a delicious morsel of red tuna which is very lightly seared and served with a smooth and silky sesame-flavoured sauce.

From Visitor Experiences
The most honored or signature ingredients at Huto, the Michelin-starred Japanese restaurant in São Paulo, include:
Wagyu beef: Featured notably in the brioche with wagyu tartare and Macadamia nuts, wagyu is prized for its exceptional marbling and tenderness, elevating the dish with rich, buttery flavor.
Macadamia nuts: Used alongside wagyu tartare, these nuts add a crunchy texture and subtle sweetness, balancing the richness of the beef.
Oysters: Served with ponzu sauce, oysters bring a fresh, briny element that complements the citrusy and umami notes of ponzu, highlighting the chef’s skill in seafood preparation.
Red tuna: Central to the hot tuna sashimi with tahini dish, the tuna is lightly seared to preserve its delicate texture and flavor, paired with a smooth sesame-flavored sauce that adds depth and creaminess.
Tahini (sesame sauce): This smooth, silky sesame sauce accompanies the hot tuna sashimi, providing a nutty, rich contrast that enhances the subtle flavors of the fish.
These ingredients reflect Huto’s focus on high-quality Japanese seafood and premium meats, skillfully combined with complementary textures and flavors to create refined signature dishes.
