The warm interior, both cosy and urbane, features a piano and works of art in a lounge vibe that brings to mind a Gentleman’s Club. In this establishment, Danny Horseele, a minimum of one Michelin star for over thirty years, rolls out his infinite know-how in the company of a loyal brigade. The food is traditional and polished, yet subtly creative, and combined with a passion for outstanding local ingredients that can be tasted right from the start. His langoustine extravaganza served in three dishes reveals one poached version in particular, flanked by powerful side dishes such as sea buckthorn and oyster leaf, together with puffed quinoa, a reduction of XO sauce, sesame seeds, a truly hearty cream of tomato and a punchy shellfish emulsion. His wizardry with sauces is definitely worth writing home about. The chef’s extensive experience and his team’s contemporary input are melded into an enticing culinary portrait. A blue-ribbon establishment that delivers the goods every time.
