Amsterdam, Netherlands
From Michelin Guide
Flore is entirely focused on providing a mindful fine dining experience. Housed in De L'Europe hotel, this upscale restaurant is lent a unique feel by its modern interior design, which features natural materials. Bas van Kranen's original approach to nature, which characterises his cuisine, emphasises vegetables, local produce and sustainability. Biodynamic growers have become regular suppliers and dairy products have been banished from the kitchen. His search for solutions feeds his creativity, and has resulted in a very pure style of cooking. Game appears on the menu in the autumn and winter, but in spring and summer, the chef turns his attention to the North Sea. The plant-based set menu is a constant, all year round. The small dishes are full of surprises right up to the last bite – a prime example is his signature dish featuring seasonal fruits and vegetables, each prepared differently. The intricate dance of flavours and textures is complemented by a fig peel oil, its gentle sweetness binding everything together. A light, airy hazelnut and Dutch wasabi emulsion adds a moderate kick. Bas van Kranen explores the depths of his ingredients, creating dishes that evoke emotion. He clearly takes pride in working with Dutch produce and now has the confidence to cook just the way he wants to.
From Visitor Experiences
Transformation from a traditional luxury restaurant to a sustainability-focused fine dining concept
Flore replaced a former flagship Michelin restaurant known for caviar, truffles, and wagyu beef with a new concept centered on conscious fine dining. This transformation included shutting down the old restaurant and reopening Flore with a focus on sustainability and plant-forward cuisine, earning two Michelin stars and a Green Star for sustainability within just eight months.
Interactive "Seasonal Studio" experience for guests
Flore features a unique "seasonal studio," a room adjacent to the kitchen where chefs display all the ingredients used that day. Guests are invited to see and learn about the fresh, locally sourced produce before their meal begins, breaking the ice and setting the tone for the dining experience. This approach emphasizes transparency and connection to nature without being didactic at the table.
Use of innovative, eco-friendly materials in interior design
The restaurant’s interior incorporates walls made from lime hemp, a bio-based material with carbon-negative properties, adding texture and sustainability to the ambiance. This choice reflects Flore’s commitment to environmental consciousness not only in its menu but also in its physical space.
