Torre de Juan Abad, Spain
From Michelin Guide
If you enjoy cuisine rooted in the local terroir, this restaurant, part of the rural hotel of the same name, 1km southeast of Torre de Juan Abad, will definitely appeal, thanks to surroundings which provide it with its inspiration. The “gastronomic” dining space (there is a second more traditional dining room called Origen) features just six tables, lots of natural light and pleasant vistas of the La Mancha countryside. Chef José Antonio Medina’s cuisine, which starts with appetisers at the bar, showcases the best local ingredients and full flavours of local Campo de Montiel cooking, including a particular focus on game (partridge, wild boar, venison, rabbit etc) – its undisputed hallmark. Standout dishes include River Mundo trout with roe and a partridge escabeche; young La Mancha goat from the Valbuena estate with cauliflower and white chocolate; green bean and basil velouté; and sea urchin and rabbit. Its set menus (Raíces and Recuerdos y Memoria) are enhanced by the best wines from the local region.

Dual Dining Experiences in One Location: Coto de Quevedo Evolución offers two distinct dining spaces within the same rural hotel— a "gastronomic" dining room with only six tables, abundant natural light, and views of the La Mancha countryside, and a second, more traditional dining room called Origen. This setup allows guests to choose between contemporary high-end cuisine and traditional, home-inspired dishes under one roof.
Focus on Local Game and Terroir-Rooted Cuisine: The restaurant's hallmark is its emphasis on local game meats such as partridge, wild boar, venison, and rabbit, reflecting the Campo de Montiel region's flavors. Chef José Antonio Medina crafts dishes that highlight these ingredients, including unique combinations like young La Mancha goat with cauliflower and white chocolate, and sea urchin paired with rabbit.
Integration with Rural Hotel and Countryside Inspiration: Located just 1 km southeast of Torre de Juan Abad, the restaurant is part of a rural hotel that enhances the dining experience by connecting guests directly with the surrounding countryside. This connection is reflected in the cuisine's inspiration and the relaxed, friendly service that complements the setting.
