The Experience

From Michelin Guide

It is surprising to find a restaurant of this level in a small town but Callizo offers a perfect gastronomic experience that will delight the senses and provide an opportunity to discover the wonderful landscapes and flavours of the Sobrarbe area. The restaurant, housed in a large, centrally located stone property with a surprisingly modern decor, plays an integral role in the dining experience, which involves a staged journey through the house to discover the true culinary essence of this region, albeit with a nod to other parts of the world. The dishes served here on two tasting menus (Tierra and Piedras) are well prepared with delicate textures and distinct contrasts that fly the flag for what the restaurant refers to as “techno-emotional mountain cuisine” which showcases the small-scale local producers who supply the restaurant. One dish that we particularly enjoyed was the trout ceviche from the nearby Cinca river, which was featured in the Spanish series “21st Century Pyrenean Landscapes”.

Unique Things

From Visitor Experiences

What makes it distinctive

  • A staged meal through a stone house: the restaurant turns the building into part of the experience, a guided journey before you sit down.
  • Two menus, one long-form: Tierra is shorter, Piedras is the full sequence, described as a 25-plus bite tour.
  • Techno-emotional mountain cooking: their self-description, with local landscapes as the narrative spine.

  • Trout, Cinca river: a noted reference dish is a trout ceviche from the nearby Cinca.
  • Sobrarbe producers and mountain pantry: the menus are designed to foreground small local suppliers and seasonal product.
  • Acid, contrast, delicate textures: the cooking leans into lightness and sharp contrast, rather than heavy, sauced plates.
