A pilgrimage to this charming restaurant is like a journey back in time and an opportunity to absorb the true essence of the timeless and verdant Basque Country in one go. You won’t be disappointed as Boroa occupies a 15C farmhouse with a pleasant terrace and open views of the surrounding valleys and mountains. In the elegant, rustic-style interior which has preserved its original structure, choose from an impressively updated traditional à la carte that showcases the roots of Basque cuisine (such as the grilled hake from the “Bay of Biscay” with cauliflower, peas and white “Huelva” prawns) and three menus: one “executive” menu entitled Bizkargi (available midweek); a more gourmet option (Mugarra); and a tasting-style menu called Txindoki, all of which focus on the best ingredients, recognisable flavours and perfect textures. The main tenet of the philosophy here is one that values teamwork: “the cooking is of course important but it isn’t everything…”.
