This remarkable restaurant in Hotel Bayerischer Hof is reminiscent of an artist's studio β chic grey dominates the colour scheme, and everything is tastefully done, down to the last detail. This understated luxury provides the backdrop, courtesy of Axel Vervoordt's interior design. The extremely personable and young yet experienced service team pull out all the stops and are always on hand. Using top-quality seasonal ingredients, chef Anton Gschwendtner and his team conjure up a pared-back take on French cuisine, drawing on Asian influences. Fantastic dishes include ikejime salmon trout with Maison Morisseau bouchot mussels, carrot, kimchi emulsion and umami vinaigrette, or tender pink-roasted saddle of venison from Gutshof Polting with cranberries, Brussels sprouts and beech mushrooms, as well as a wonderful combination of a vinegar venison jus and a lightly foamed cognac and miso sauce. A vegetarian set menu can be arranged with a day's notice. The extensive wine list is wonderful β the wines served by the glass complement the set menus beautifully. Alternatively, opt for the signature wine pairings.
