Singapore
From Michelin Guide
Chilean chefs Araya and Guerrero worked at the same restaurant in China. Their ingenious creations – deeply influenced by Araya's time in Spain and Japan – use an eclectic mix of Chilean and Japanese produce, with a South Pacific theme. Japanese favourites such as kinki and cod milt are jazzed up by aji amarillo and merkén from Chile, served alongside French pigeon and caviar. They even ferment and roast their own cacao to use in sauces.
From Visitor Experiences
Araya is the first and only Chilean restaurant in the world to be awarded a Michelin star, making it a unique destination for South American fine dining in Singapore.
Araya offers a degustation menu titled “Costa” (S$368), which is entirely focused on seafood, reflecting Chile’s extensive Pacific coastline. This marine-centric approach is rare among Michelin-starred establishments and showcases ingredients like King Crab, sardines, and scallops in innovative preparations.
The meal begins with Chapalele, a traditional Chilean sourdough potato bread, served with Cochayuyo (a type of Chilean seaweed) spread and Merken (a smoked chili pepper) butter—a pairing that introduces diners to authentic Chilean flavors and textures rarely found outside Chile.
