Lisbon, Portugal
From Michelin Guide
Alma is one of those restaurants in which the fine-dining experience is one of constant pleasure – the combined result of the high level of innovative Portuguese cuisine on offer and the incredible teamwork on display, which is fully focused on the art of quality service. The decor here is contemporary but with lots of character, enhanced by its setting behind the elegant façade of an 18C building that was once the warehouse for the famous Bertrand bookshop, which opened in 1732 and is recognised as the world’s oldest. Henrique Sá Pessoa’s cuisine, which can be enjoyed on two menus (Alma, inspired by the chef’s signature dishes, and Costa a Costa, a tribute to Portuguese fish and seafood), includes dishes such as scarlet shrimp, pumpkin, harissa and black garlic; Portuguese-style baked mullet with grilled sea lettuce and sour pepper; and lamb, red cabbage “migas” and smoked aubergine. The chef himself is a frequent visitor to the dining room, assisting with service and interacting with guests.

The most honored or signature ingredients at Alma, the Michelin-starred restaurant in Lisbon, reflect a deep connection to Portuguese culinary tradition with innovative touches:
Salted Cod (Bacalhau): This is the quintessential Portuguese ingredient and a cornerstone of Alma's cuisine. Chef Henrique Sá Pessoa offers a refined take on traditional dishes like bacalhau à brás, which combines salted cod with onion, deep-fried potato, and egg to create a rich umami experience. This ingredient symbolizes Portuguese heritage and is central to the restaurant's identity.
Olive Oil: Alma produces its own signature olive oil, highlighting the importance of high-quality, local ingredients in its dishes. Olive oil is a fundamental element in Portuguese cooking and is used to enhance flavors subtly and authentically.
Cherry & Apple Wood Smoked Butter: This unique butter is a signature accompaniment at Alma, adding a distinctive smoky aroma and richness to the dishes. It exemplifies the restaurant's attention to detail and innovative approach to traditional flavors.
Alentejo Chorizo: Featured in dishes such as Portuguese sole with green peas mash and noisette hollandaise, this cured sausage from the Alentejo region adds a spicy, savory depth, connecting the cuisine to regional Portuguese flavors.
Fresh Seafood: Reflecting Portugal's coastal bounty, fresh seafood is a highlight, especially in the "Costa a Costa" tasting menu. Ingredients like Portuguese sole and other local fish are prepared with technical precision and often combined with Asian influences, demonstrating the chef's global culinary perspective.
These ingredients are not only staples but are elevated through sophisticated techniques and thoughtful pairings, embodying Alma's philosophy of flavor, quality, and cultural homage.
