Here at 1789, chef Florian Stolte has carved out a niche for himself that perfectly complements the culinary portfolio of Hotel Traube Tonbach. He showcases his signature style in a pair of six-course set menus, one of which is vegetarian. His approach is minimalist and modern, with contrasting Asian influences woven through the courses. He skilfully showcases the exceptional quality of the ingredients, allowing, for example, the distinctive flavour of the juicy, tender langoustine to shine by serving it raw as a classic carpaccio and using minimal seasoning. Another case in point is the grilled Wagyu beef fillet, the wonderful meaty aromas of which are brought to the fore by a mere sprinkling of salt. The restaurant itself is done out in an intimate, minimalist and yet chic and sophisticated style, the atmosphere is pleasingly relaxed, and the well-staffed front-of-house team is friendly and professional.
